Quinoa Fun (by LivingJen)

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup of kidney beans
  • ½ cup of Boscoli Italian Olive Salad (my all time favorite)
  • ½ cup of sliced raw almonds
  • ½ cup of sliced scallions
  • ½ cup of sliced cilantro
  • ⅛ cup of fresh lemon juice
  • 2 tablespoons of sea salt

 

Directions
Cook Quinoa according to package. 1 cup of Quinoa to 2 cups of water. I add a dash a sea salt to the water. Let Quinoa cool and add ingredients.
 
Serves approx. 4
